OUR FAIRTRADE INGREDIENTS

It’s our farmers’ fresh and aromatic ingredients that bring authenticity, vibrancy and flavour to our pastes and sauces.

TURMERIC
Tumeric is a zingy yellow spice that comes from the rhizome (fleshy underground stems) of a plant from the ginger family. It adds aromatic, warm and earthy tones, whilst adding vibrancy to many Thai dishes.
GARLIC
Garlic is called for in pretty much every Thai dish you can imagine! Our farmers grow a variety that’s especially punchy and aromatic, adding fragrance and flavour to so many of our products.
SHALLOTS
Shallots are mini members of the onion family and are loved in Thai cooking. Our farmers grow a small, red variety that’s mild yet full of flavour.
YELLOW GALANGAL
Yellow galangal is a knobbly root from the ginger family. Its zingy, fragrant and herbal flavour is key in many Thai dishes.
LEMONGRASS
Lemongrass is a tropical variety of grass that packs a sweet and fragrant lemony punch. It’s a thirsty, sun-loving plant, ready to be freshly ground or chopped
RED & GREEN CHILLIS
No Thai dish would be complete without a bit of spice from our red and green chillies. Our farmers grow a variety of chillies from the small yet fiery Prik Kee Noo to the smooth ‘Redsun’. The rich soil and pure air make them especially plump, tasty and spicy.
GINGER
Ginger is a fiery, juicy root that is bursting with aromatic flavours. Ginger loves to stay hydrated, so our farmers have to keep it well watered. It’s a great crop for the rainy season!
