Green Curry with Chicken

Ingredients

– Honest Bowl Green Curry Paste (70g)

– Coconut milk 200 g

– Sliced chicken meat 150 g

– Water 100 g

– Aubergine 60 g

– Basil leaves 5 g

– Sliced red chili 5 g

METHOD

STEP 1

Put a pan on the hob and turn on medium heat, add 50g of coconut milk then and stir in the Green Curry Paste. Stir fry for 3-4 minutes, until fragrant.

STEP 2

Add remaining coconut milk and water, bring to a boil..

STEP 3

SAdd the chicken and aubergine, and simmer until cooked through, stirring occasionally.

STEP 4

Turn off the heat and garnish with basil leaves and sliced red chili.

STEP 5

Serve with rice!
